GRAN MORAVIA HARD CHEESE

Gran Moravia is the sole hard cheese that has a Eco-sustainable chain. It is created by Brazzale, the oldest Italian dairy company, in Moravia, the wonderful agricultural region located in Czech Republic, between Wien and Prague.

Gran Moravia is a long aged hard cheese, resulting from the long experience gained by Brazzale family on the production of typical cheeses. Gran Moravia is suitable for Vegetarian diets and has the Halal certification. Gran Moravia is the outcome of the extraordinary process and product innovations that allowed Brazzale Group to obtain at the same time the highest Quality, the best Sustainability and the greatest Value for money. The realization of the project was made possible thanks to the amazing zootechnical qualities of Moravia region, one of the most beautiful and rich in tradition in all Europe. Gran Moravia has a rich and smooth taste, round and seducing flavors that the long aging, carried out in Italy, refines reaching a complete harmony.

THE ECO-SUSTAINABLE CHAIN

Italian technicians developed in 10 years a unique agro-industrial project: more than 72 farms on an area of approximately 80.000 hectares. Everyday the cheese plant in Litovel receives the milk produced by more than 23.000 lactating cows characterized by a high genealogy and selected to obtain the best proteins.

The choice of livestock’s feed is taken following the Gran Moravia specification, requiring that each farm grows on their own the forages for their cows. Veterinarians continuously check the health of the fodder and the wholesomeness of the milk that every day is carried to the cheese production plant. At the plant the team of cheese makers uses its wide expertise to create two wheels of Gran Moravia for each copper vat, following the typical artisanal production that comes from Italy. After the salt phase, the cheese wheels are brought to Italy where they are long aged and then packed at the Company’s headquarters located in Zanè (VI).

THE CERTIFICATION OF THE CHAIN - DNV EN ISO 22005:2008

The Gran Moravia Eco-sustainable chain obtained the certification in accordance with the rules UNI EN ISO 22005:2008.

On June, 14th 2011 the reliable third party “DNV – Det Norske Veritas” successfully completed the certification process in compliance with the ISO rules. Gran Moravia hard cheese and its supply and production chain gained the recognition of Responsibility and Eco-Sustainability: two important pillars that have always guided the management of Brazzale Group. The objectives of the chain, on which Gran Moravia has been evaluated, took into consideration the compliance with the ISO requirement and also the impact on the environment for the safeguard of the people and the environment. The optimal parameters fixed for the Gran Moravia specifications are transparent and certified by a trusted third party:
• at least 5 hectares of cultivated land for each cow;
• free stabling and individual berths for more than 95% of cows;
• load of nitrates 7 times lower than the European limits;
• aflatoxins limit 10 times more restrictive than European ones on milk, making the finished product completely free from aflatoxins.
The exceptional characteristics of the supply and production chain directly translate into the wholesomeness and quality of the finished product, thus making Gran Moravia hard cheese unique!

FIRST PRIZE ANUGA AWARDS 2011 – GRAN MORAVIA BEST PRODUCT INNOVATION

Gran Moravia hard cheese won in Cologne the first prize "Italian Anuga Awards 2011" for the best product innovation

At the World’s most important food trade show, ANUGA, Kölnmesse Italia and Tespi mediagroup have held a contest to give recognition to “the best products, the best companies of the Italian food industry, the quality, the work, the passion, the capacity to communicate their products’ values”. The award of the "Italian Anuga Award 2011" prize represents an extraordinary result that awards not only the exceptional dairy and organoleptic qualities, but also the innovative structure of its Eco-Sustainable chain (milk supply and cheese production) created by the Italian technicians in Moravia region (Czech Republic) and its aging and packaging phases carried out in Italy.

BRAZZALE FAMILY AND GROUP

Brazzale Group is the oldest Italian dairy company, managed since 1784 by the Brazzale family, now at its 8th generation.

At least since the end of ‘700 Brazzale family trades and produces butter and cheeses between the Asiago Plateau and the Veneto plain. Since 1898 the headquarter was moved to Zanè, near the city of Thiene, which at that time was an important market place for dairy products.
